generous 1 ½ tsp double acting
tsp salt
tsp sugar

2 eggs somewhat beaten
½ stick butter, melted
Cups milk, at room temperature


Mix dries; add eggs to milk and mix; add milk mixture and melted butter to dries and stir.  This can be lumpy.
Cook on lightly greased griddle.  Add blueberries to each pancake if desired.

Green Bean Casserole
(based on a recipe in The Best of Shaker Cooking, by Amy Bess Miller and Persis Fuller, 1985)

3 T butter, melted in saucepan
2 T flour
1 tsp salt
¼ tsp pepper
1 tsp sugar
½ medium onion, in small dice
1 cup sour cream
1 ½ lbs fresh green beans or 2 pkgs frozen green beans (either cut or French-cut)
8 oz shredded cheddar (mild to extra sharp, as you prefer)
½ cup fresh bread crumbs, sautéed in 1 T of the butter

Prepare the fresh green beans by cutting off the ends and cutting them into short lengths, then steaming them to whatever degree of doneness pleases you.  If using frozen beans, cook them only to the point of being heated through.  Drain well and set aside.
Melt 2 T of the butter and sauté the onions with the salt over low to medium heat until they are translucent.  Mix in the flour quickly and create a roux.  Let it cook briefly and then mix in the sour cream, sugar, and pepper. 
Add the drained green beans and mix well.  Put the mixture into a 2-quart casserole. 
In a small skillet, combine the bread crumbs and the remaining butter, mixing and toasting until they are hot and buttery.  Spread the shredded cheese and the crumbs over the top of the casserole. 
At this point, the casserole can be refrigerated and held for a day, if necessary.  Allow it to come to cool room temperature before baking for 30-45 minutes in a 350 degree oven.  If you bake it straight away after putting it together, only 30 minutes will be needed to bring it to bubbling deliciousness!
